Domaine de Bichery

Neuville-sur-Seine - Côte des Bar

Domaine de Bichery was created by Raphaël and Hannah Piconnet in 2015 in the heart of the Côte des Bar when Raphaël took over the family estate after a few vintages in Burgundy, Bordeaux and Switzerland. 

 

The estate is composed of 8 hectares of vine, all organic farmed, split between the production of limited cuvées for the domaine and the supply of the local cooperative. 

 

While Raphaël was born and raised in the Côte des Bar, Hannah hailed from Germany and they both met in Bordeaux in 2012 while Raphaël was working in Pessac-Leognan.

 

The couple always had a clear vision of the direction of the estate – a full conversion to organic farming, the deep expression of terroir character and the production of unique cuvées, from different blends and small single vineyards.

La Source

A Brut Nature made of 50% Pinot Noir and 50% of Chardonnay, naturally fermented with wild yeasts, 40% in barrels and 60% in stainless steel vats. Undergo a natural malolactic fermentation, then aged on the lees. Only 6500 bottles produced.

 

Les Fontaines 

This is a Brut Nature Rosé from a blend of 15% of Pinot Noir as Saignée and 85% of Pinot Noir as Blanc de Noirs. The grapes used for the Saigneé proportion are harvested 10 days later to gain a higher ripeness. Naturally fermented with wild yeasts, 30% in barrels and 70% in stainless steel vats. Undergo a natural malolactic fermentation, then aged on the lees. Only 2330 bottles produced.

 

Les Terres Melées 

A Brut Nature Blanc de Noirs made of Pinot Noir from different parcels of the domaine : Les Mées, Val Ligé and La Fontaine du Noyer. Naturally fermented with wild yeasts, 45% in barrels and 55% in stainless steel vats. Undergo a natural malolactic fermentation, then aged on the lees. Only 1997 bottles produced.

 

Les Meuniers

A Brut Nature 100% Pinot Meunier expression coming from the single vineyard La Fontaine du Noyer. Naturally fermented with wild yeasts, 60% in barrels and 40% in stainless steel vats. Undergo a natural malolactic fermentation, then aged on the lees. Only 750 bottles produced.

 

En Val du Clos 

A Brut Nature made of 80% Pinot Noir and 20% Chardonnay from this single vineyard En Val du Clos. Naturally fermented with wild yeasts, 60% in barrels and 40% in stainless steel vats. Undergo a natural malolactic fermentation, then aged on the lees. Only 850 bottles produced.
